Smoked some sinless boneless breasts weekend before last and shredded for tacos. They were great. Didn't take pic's of that one, though. Probably make some tacos today with all the left overs. I need your phone # Alex, so that I can call you next time you smoke a butt, and remind you about the slaw. Downeast Johnny Posted June 4, 2015 Report Share Posted June 4, 2015 (edited) I guess I should share some of the things I have smoked over the last couple weeks: Buffalo Chicken Legs- Just marinated in buffalo sauce and a tiny bit of oil, then cooked with the sauce on Pulled Pork- This did not come out as well as I hoped, I decided to use a different rub which was a mistake I smoked a Corned Beef the other day.Turned out great! After a couple ours getting smoke, it was then basted in a Apricot BBQ sauce mixed with a little dijon, then covered and left too cook in its own juices. Great looking chow you've got going on there Dan. Good looking mac & cheese there with the PP. Good M & C goes with anything smoked. I've been doing a bunch of chicken thighs, here lately, and have gone to injecting them with melted butter mixed with hot wing sauce. (Actually I have been using mild wing sauce and find it to be a better flavor, plus the GF can't stand too much heat0. I use the small injecters you can get at the grocery store fopr $5.00 or less, then baste with any extra injection toward the end of the smoke. Its much bigger, it has the ability to add a cold smoker attachement, plus it has a way to easily dump the pellets out when you want to switch to a different wood. Looks like I need to sell my older one. Not yet, I have yet to cook on the new grille since I just bought it yesterday, but im planning on using it this weekend since Im having a bunch of friends over for a BBQ. They make a rib rack for this new grille I have where you can put 8 full racks on the grille (vertically). However The way I cook my ribs, I cant put them vertically, but my dad says he can get 5 racks on his Grille (Same as my new one), vs only 2 racks on my old one. How much shipped on the old one. Lol. That will be expensive. Can't wait to see what you cook on the new smoker!!! I bet it would be pretty expensive. I was looking on Amazon and they sell the next step up from my new one ( 2 steps up from my old one) and they charge $500 for shipping. Ouch Hey Dan, I realize that saucing is a bit different without the racks laid out flat, but I've had good results saving space by rolling racks of Baby Backs. Good Deal on the Nathans Dogs...I've been on a leg quarter kick here lately..They are tender as hell and everyone like them, plus there dirt cheap for a pack of three lol...
