Downeast Johnny
Looks like you aced it all Alex. Your brisket looks near perfect and the thighs look great too. That plate of chow is making me hungry. Did you smoke the brisket on your WSM?

Stitches040
I did up another rack of St.Louis style ribs for the family last night .... Rub - Garlic Powder, Paprika, Black Pepper, Sea Salt, pinch of Dark Chili Powder and a lot of Turmeric. Cook - 3.5 hrs at 225*F - with around 1:40 mins of Pecan/Apple woods smoke. Cook - 1 hr wrapped in tinfoil, back into smoker, continue to cook at 225*F. Cook - Pull, and let rest for 45 minutes. Cook - Finished on the grill with Dinosaur BBQ, barbecue sauce ... Side dish - I did yellow squash out of our garden. Garlic, Garlic Powder, Salt, Pepper and olive oil. Cooked on the grill in grilling pan. (sorry, no pics .. forgot) Rub Smoker Grill Refreshments

I did use my WSM for the brisket John and used my kettle for the thighs.
Downeast Johnny
It was Rib Eye day yesterday Evoo, salt, pepper, and garlic powder I set up one grill for low and slow. Grilled the steak at around 230* to an internal temp of 80* Then shifted the steak to the second grill set up with a full chimney of coals with a cast iron griddle set on the coals Set it out topped with herbed butter, (Thanks for the tip Shuan), a pasta salad and some Bogue Sound watermelon, (Best melon I've eaten).
